With peppers, zucchini, onions with mole sauce.
Not the cheapest dinner, definitely not for a taqueria this style, but filling and satisfying on a casual no-expectations dinner. The cheese wasn’t melted, and the enchiladas weren’t baked. The vegetables were a good option, given a lot of the taquerias so just cheese for the vegetarian version.
